Sweet Potato Turkey Chili

1 lb gound turkey
Taco Seasoning mix
Salt and pepper, to taste
1 onion, diced
2 cloves garlic, diced
3 or 4 stalks celery, chopped
1 – 14.5 oz can diced tomatoes
2 large sweet potatoes, peeled and chopped
2 cups chicken broth

Step 1
In a skillet sauté onion, garlic, and celery. When almost translucent add ground turkey and cook until done.

Step 2
In a large pot add the cooked turkey, onion, garlic, and celery mix. Add in the taco seasoning mix, diced tomatoes, sweet potatoes, and chicken broth.

Step 3
You will want to use enough chicken broth to cover the meat and veggies. If you want a thinner soup add more broth, for something thicker use less. I used about 2 cups. Bring to a simmer, put the lid on the pot and turn the heat to low. Let the soup simmer for about 30 minutes or until the sweet potato becomes soft.
